Use M4A copy when your goal is to remove the video track, not change the sound. This is useful when you have a lecture clip, camera recording, or exported edit where the embedded audio is already AAC and you only need an audio-only file.
Use MP3 when the final destination matters more than preserving the exact stream. An older car stereo, a small music player, a CMS upload form, or a basic editing app may accept MP3 more reliably than an audio track copied from a video container.
Use WAV when you plan to cut, sample, denoise, transcribe, or process the audio next. WAV files are bigger, but they avoid adding another lossy encode before your next editing step.
